There's something about the pimento sandwich at the Masters that makes it special - and for the week that's in it, Iano found out how you can chow down on a homemade one, on your own couch (even if you're rubbish at cooking!) We know it ain't pretty - but if it's comfort food you're after, here it is:
3 cups shredded white cheddar cheese
2 cups shredded yellow sharp cheddar cheese
4 oz crumbled blue cheese
1 cup shredded Parmesan cheese
1 (4-oz) jar sliced pimentos, drained (A pimento is essentially a mild version of the chili pepper.)
1 cup light mayo
2 tbs Dijon mustard
1 loaf of white bread
Combine cheeses, pimentos, mayo and mustard in a food processor and process until smooth. Cover and chill. Spread on bread slices. Makes four sandwiches. Eat.
