A new document published in England detailing the perfect cup of tea has caused UPROAR! The British Standards Institution has released a guide called “Preparation Of A Liquor Of Tea For Use In Sensory Tests” (yep!) and in this, it recommends that the milk must be poured into the cup before the tea, which should be brewed for 6 minutes.

 

Who would have thought this would create such an outpouring of rage from the Irish public (and more specifically, the listeners of the Ian Dempsey Breakfast Show)?

 

If you're using tea leaves, milk in cup first, ‘cos pouring the milk after makes the leaves swirl up through the whole cup!

Ian back to the tea - regarding what you said about milk curdling in tea. Have you heard of the process of boiling milk at all for various foods? As a coffee man, you should know of the various coffees made with boiling milk. Sean, Cork.

How's it goin’ Ian? I agree with pouring the milk in last. However, if you pour the milk in first when using tea leaves, it will keep the leaves to the bottom of the cup. Try it! Alan
