Gina and Karol from The Daly Dish chatted barbecue recipes with Alison and these are must-makes.

Summer Lemon Pasta

Serves 2

What you need :

200g pasta (whichever type you prefer)

2 garlic cloves sliced finely

1 to 2 chilies (less or more depending on how hot you like it) sliced finely

1 lemon

3 slices of prosciutto

1 teaspoon lemon pepper

2 tablespoon grated parmesan

Handful of fresh Basil

Method :

Cook your pasta, drain off the water and put aside.

Throw a good glug of olive oil in a pan on medium heat and allow to heat.

Throw in your garlic, chili and lemon pepper. Cook for a minute or so and allow it to infuse with the oil.

Tear up your prosciutto and add it in. Mix it up for a minute then add in your basil and pasta.

Stir the pasta through mixing with everything.

Squeeze your lemon in and then add in a bit of lemon zest too, followed by your parmesan.

Give it all a good mix and then serve.

Easy Garlic & Chili Prawn Pasta

3-4 tablespoons of olive oil

Fresh prawns (use as much as you like)

3-4 cloves of garlic roughly chopped

1/2 - 1 teaspoon of chili flakes (depending on your preference, you can use a full fresh chilly sliced or diced also)

1 teaspoon of smoked paprika

Spaghetti or linguine pasta (make enough for 1/2/3/4 people etc)

Parmesan to finish

Crusty bread on the side

Method:

Heat the oil.

Add in the garlic and let it fry off for 1-2 mins then add the chili flakes and the smoked paprika. Mix to flavour all the oil.

Add in the prawns. They only need 3-4 mins in hot oil to cook through.

Add in the cooked spaghetti or linguine and coat well in that deliciously-flavoured oil.

Serve and finish with a good grating of parmesan.
