Nico spoke to Alison Curtis on Weekend Breakfast about his Roscommon and Jamaican heritage and his travels which have inspired his life as one of the country's best barbecue chefs.
"I grew up with the meat and potatoes but my Mam would always throw on a little something special like the Jamaican hot sauce and I then spent time in South America and that inspired another twist to my food."
