He told Mairead about this 3-indregient Lemon Posset which you can whip up in no time for Easter, or any other occasion.
Lemon Posset and Chocolate Shavings
Ingredients
For the lemon posset:
- 2 lemons, juiced
- 125g caster sugar
- 400ml cream
For the garnish:
- chocolate shavings
Method
For the lemon posset:
- Have two small pots ready, add the lemon juice and sugar in one and the cream in the other. Place both of them on the stove over a medium heat. Gently bring both pots to the boil. Make sure to stir the lemon and sugar.
- Once both are to the boil, turn off the heat. Pour the lemon and sugar into the pot with the cream. Whisk this to bring it all together. Pour this into a jug and then pour into ramekins or glasses.
- Allow this to set in the fridge for 6 hours or overnight.
To serve
Remove from fridge and add chocolate shavings to the top.
