The other day on the show, Mairead was talking about the different ways we can keep family and friends healthy and safe this Christmas and some of you are planning a Christmas BBQ so you can dine outdoors! Our lovely listener Lee barbecues every weekend no matter the weather and he had some tips if you plan to do the same.
Lee is originally from South Africa where they are serious about barbecuing, or Braii as they call it. His first tip is to be careful - try to get the grill in a sheltered spot. His garden is surrounded by walls and he has built a shelter for it too.
Lee said the key to getting your Christmas meat cooked to perfection is to move the coals to the side and keep basting, then you will have it beautifully slow cooked over 5-6 hours. If you put the turkey directly over the coals, it'll end up burning and you've enough to be doing on Christmas day!
