Conor Spacey is the Culinary Director at FoodSpace and Irish representative at Chefs Manifesto (130 chefs from 38 countries working together to achieve a more sustainable food system).
Dermot and Dave caught up with Conor ahead of his' Zero Waste Christmas' masterclass at this year's Taste Of Dublin: Festive Edition, to learn how we can all "think before you bin it".
Conor says; "Christmas is a feast time, it is a traditional feast time, and it's not about cutting back on the amount you're eating, it's just looking at what you're eating and making sure you use all of it".
He guides us through the techniques he uses to transform vegetable and fruit peels into tasty chutneys, pestos and kombuchas. And let's not forget about the "scobys" (Symbiotic Culture Of Bacteria and Yeast):

Taste Of Dublin: Festive Edition takes place at the RDS from November 28th to December 1st, with Conor's class on Thursday the 28th.
