As a child Gearoid Lynch was in and out of hospital with cramps and various other symptoms of what we now know to be coeliac disease.
Gearóid learned everything he could about his condition and began to re-imagine all the meals that he has missed out on and adapted for a new gluten-free lifestyle but with no compromise on taste.
